Ingredients
• 1 lb. salmon fillet, skin removed
• 2 cups water
• 1 lemon, sliced
• 1 tsp lemon zest
• 1/2 tsp salt
• 4 large whole wheat tortillas
• 2 cups mixed salad greens
• 1 cup cucumber, thinly sliced
• 1/2 cup cherry tomatoes, halved
• 1/4 cup red onion, thinly sliced
• 2 tbsp fresh dill, chopped
• 1 tbsp fresh parsley, chopped
• 1/2 avocado, sliced
• 1/4 cup plain Greek yogurt
• 1 tbsp lemon juice
• 1 tsp olive oil
• Fresh black pepper to taste
Instructions
1. In a wide skillet, combine water, lemon slices, lemon zest, and salt. Bring to a gentle simmer.
2. Add salmon fillet and poach gently for 10 minutes or until cooked through. Remove and let cool slightly, then flake into large chunks.
