Living in South Florida with warm temperatures year-round is the perfect setting for all types of salads and fresh, easy-to-make spreads. So here is my Smoked Salmon Stuffed Tomatoes, and it's also delicious on crackers, bagels, or toast.

Ingredients
- 8 0unce package of Smoked Salmon (diced)
- 8-ounce package of whipped cream cheese
- 1/2 cup Crema Mexicana, or you can use Greek Yogurt
- 1 lemon for zest and juice
- 1/4 cup fresh chopped Parsley
- 1/4 cup chopped Scallions
- 1 tbsp fresh Dill
- 1 tbsp fresh chopped Mint
- 4 medium-sized tomatoes for stuffing
Preparation
- In a medium-sized bowl, add chopped parsley, scallions, dill, and mint. Then add softened cream cheese and Crema Mexicana and blend well.
- Add diced smoked salmon, lemon zest, and juice, and mix well.
- Salt and pepper to taste.
- Prep tomatoes by cutting the tops off and removing the tomato pulp and seeds.
- Then, with a medium-sized ice cream scoop or a spoon, stuff your tomatoes. Enjoy!
