Florida with warm temperatures year round is the perfect setting for all types
of salads and fresh easy to make spreads. So here is my Smoked
Salmon Stuff Tomatoes and it's also delicious on crackers, bagels, or toast.

Ingredients
- 8 0unce package of Smoked Salmon (diced)
- 8 ounce Cream Cheese whipped
- 1/2 cup Crema Mexicana or you can use Greek Yogurt
- 1 lemon for zest and juice
- 1/4 cup fresh chopped Parsley
- 1/4 cup chopped Scallions
- 1 tbsp fresh Dill
- 1 tbsp fresh chopped Mint
- 4 medium size tomatoes for stuffing
Preparation
- In medium size bowl, add chopped parsley, scallions, dill, and mint. Then add soften cream cheese and Crema Mexicana and blend well.
- Add diced smoked salmon lemon zest and juice and mix well.
- Salt and pepper to taste.
- Prep tomatoes by cutting the tops off and removing the tomato pulp and seeds.
- Then with a medium a size ice cream scoop or a spoon and stuff your tomatoes. Enjoy!
