Ingredients - for Fruit Syrup
- 1 1/2 cups apple cider
- 3 cups fresh blueberries - divided
Preparation - Blueberry Fruit
Syrup
1. Place the cider and two cups of blueberries in a deep saucepan over
medium heat. Simmer uncovered until thickened, for about 35 - 45 minutes,
stirring occasionally and skimming off any froth that appears on surface.
2. Strain the syrup into a bowl, pressing on the solids to push
through pulp.
3. Then return to saucepan and add 1 cup of fresh blueberries and let
simmer for about 2 minutes. Then serve over hot pancakes.
Makes about 1 cup
of syrup.
