Tilapia with a Neo-Soul Touch


When delicious seafood is dipped in flavorful batters or coatings before baking or frying, it not only has an extra dimension but retains its moisture and therefore wonderfully succulent.  My pan fried Tilapia was marinated overnight then next day dredge in season flour combined with instant mash potato flakes which makes the perfect coating for this fish.

What will you need !

  • 3 nice size Tilapia fillets (cut in half to may tenders)
  • Marinade
  • 1 tbsp Fish Sauce
  • 2 tbsp Toasted Sesame Seed Oil
  • 1 tbsp Mrs Dash Garlic & Herb Seasoning
  • 1 tsp crush Black Pepper
  • Season Flour
  • 1 cup All-Purpose Flour
  • 1/2 cup Instant Mash Potato Flakes
  • 1 tbsp Old Bay Seasoning
  • 1 tsp Garlic Powder
  • 1 tsp Cumin
  • 1 tbsp crush Black Pepper
  • 1 tsp salt (optional)
  • Oil for frying

Steps

1.    Place Tilapia fillets in a large Ziploc storage bag and add fish sauce, sesame oil, Mrs Dash Garlic & herb, and black pepper.  Seal bag and make sure fish is covered well.  Then place fish in refrigerator and let marinade for an hour or overnight if you can.

2.    Prepare to fry the fish - in a large Ziploc bag, add flour, instant mash potato flakes, Old Bay, garlic powder, cumin, black pepper, and salt if you desire.  Place fish in bag and toss and shake until Tilapia fillets are completely covered.  Then remove fillets and shake off excess coating and place on a plate to give coating a chance to adhere to fish.

3.    In a large frying pan, heat oil to 325˚F (hot) place two fillets at a time and fry until golden brown on each side and crispy.  Then remove fillets and place on a paper towel to drain.  Continue process until you finish.  Serve with hot sauce and your favorite side dish. Enjoy !
